
Hearty Hamburger Vegetable Soup – one of my favorite things about hamburger soup is its versatility. It’s the perfect “use what you’ve got” meal, where almost any vegetable hanging out in your fridge or pantry can join the party and still result in a warm, delicious bowl of comfort.
Whether it’s the last few carrots from a forgotten bag, some slightly wilted celery, or those potatoes you’ve been meaning to use, they all have a place in this soup. The rich, savory flavor from the seasoned ground beef and broth ties everything together beautifully, no matter what combination you toss in.
This soup isn’t just practical—it’s also hearty and satisfying. It’s the kind of meal that fills your belly and warms your soul, especially on those chilly days when you need something cozy simmering on the stove. Plus, it’s a great way to reduce food waste and make the most of what you already have on hand.

Hearty Hamburger Soup
Ingredients
1lb hamburger
1-2 cups of green beans (freeze dried or fresh taste best)
1 cans of Rotel or diced tomatoes
3-4 potatoes of any variety diced
4 carrots diced into rounds
4 celery stocks diced
1 diced onion of choice
1-2 boxes of beef broth depending on how soupy you want it. (We use bone broth for added protein and nutrients)
More optional Veggies:
Zucchinis, yellow squash, corn, peas, bell peppers - or any other veggies you want.
Ingredients
- Seasonings:
- 1 TBS and 1 tsp Italian seasoning
- 3 tsp Minced garlic
- 1 TBS Beef Better Than Bouillon Paste
- 1 TSP Garlic powder
- 1 tsp Onion powder
- 1 tsp Dried Chopped Basil
- Salt & Pepper to taste. ( We like to use The Blend by Kinders)
Instructions
In a large soup pot brown the hamburger with salt and pepper.
Once the burger is brown add onion, minced garlic and sauté for 2-3 minutes.
Add celery, carrots and the 1 tsp of Italian seasoning and sauté for 1 minute.
Add broth and all remaining ingredients and seasonings, *If you are adding corn, zucchini or any other vegetable that cooks quickly, wait to add until the last 10 minutes or they will get way to soft.
Simmer for 30 minutes or until carrots, potatoes and green beans are tender.
Notes
- * Taste test the broth and add more seasonings to taste.
- If you use a fattier ground beef strain before adding veggies and broth.
- Use bone broth for added protein. We love Kettle Fire.
- Using Rotel vs Diced tomatoes will add a spicy kick.
