With a Protein Twist

Looking for a delicious and foolproof recipe for homemade English muffins? These sourdough English muffins are not only simple to make but also pack a protein boost!
The secret? I use Greek yogurt instead of milk. This easy swap adds extra protein and creates a rich, tender texture that’s absolutely irresistible. As someone who proudly claims the title of “world’s most imperfect baker,” I can promise you this: no matter how many mistakes I make, these muffins turn out amazing every single time.

Easy Sourdough English Muffins
Ingredients
- 1/2 cup active starter
- 1 Tablespoon of Pure Maple Syrup (or honey)
- 1/2 cup plain Greek Yogurt
- 1/2 plus 1/3 cup water
- 3 cups all purpose flour
- 1 tsp mineral salt
- You can get cornmeal for sprinkling a 1/4 cup but I don't personally as I don't use it for anything else and always forget to buy it.
Instructions
Make the Dough
Add all the ingredients except for the 1/3 cup of water and the cornmeal to a stand mixer using the dough hook (0r a large mixing bowl to mix and knead by hand) If it isn't coming together, slowly add the 1/3 cup of water, you may not need all of it. If you add to much, your dough will be to sticky and hard to work with.
Mix until combined and then let it rest for 30 minutes before kneading for 5 minutes. Do no over mix or again your dough will become a sticky mess.
Cover in a medium to large bowl for 8-12 hours for the overnight ferment.
Shape
Turn the dough out onto a lightly floured surface and with your fingers spread out until your dough is an inch thick. Using a biscuit cutter or a large mouth canning ring cut. Into circles.
Once they're all cut, cover and let them rise for another hour.
Cooking
Warm up your skillet or flat top griddle. If you're using cornmeal sprinkle and cook for 4 minutes on each side covering with a lid.
Notes
I have rolled the dough out with a rolling pin vs my fingers and they have still turned out delicious.
You can freeze them for up to 3 months as long as they're in a freezer safe bag or container.
